How to Make Turkey Sausage - a Healthy Choice

Hi again everyone,
As some of you may be seeing, a lot of encouragement and inspiration comes from my best friend.
She asked me to please post my sausage recipe, so here it is:
INGREDIENTS
1 or 2 pkgs of turkey sausage (Shady Brook Farms is good, if it's in your area) there are approximately 8 to 10 sausages in one pkg, use accordingly
vegetable oil
1 cup sliced zucchini, skin on
1 cup mushrooms, sliced or chopped
1/2 large onion and/or 1 bunch of scallions (preferably scallions, sliced or chopped)
1 each, green, red and yellow peppers, sliced
2 large (not huge) cans of salt-free tomato sauce
1 or 2 cloves of fresh garlic (optional)
1/2 lb pasta (your choice, cooked to your liking)
A few sprinkles of salt, pepper and garlic powder or garlic salt (to your taste, but if using fresh garlic, eliminate the garlic powder and/or garlic salt)
Preparation
In a large skillet, pour in a vegetable oil, (Crisco is my favorite) enough to coat the bottom of the pan
Add turkey sausages and brown over a low to medium heat, stirring occasionally
Add onions or scallions, stir, let simmer for about 5 minutes on a low heat
Add all the remaining ingredients, cover and simmer on low heat for 20/25 minutes
While this is simmering, prepare the pasta, drain
Serve over the pasta of your choice
Serve along with a nice salad, good crusty bread, and enjoy!
Simple, non-fattening, and economical!
Variations can be made to the above, if you don't care for the vegetables or spices listed, add what you like. Invent, be creative! I promise you'll enjoy!
The beauty of this recipe is it is healthy, colorful, and tasty. This was my own creation based on my wanting to start eating healthy on my own, without relying on the kazillion diets that are out there. I suppose it would have worked had I continued in this vein, but alas,,,,I fell back into my old habits. I am sure though, if I take my time and consciously purchase foods that are healthy, I can dream up some other wonderful dishes. Time will tell :)
