Summer's Coming - Cool Beverage Recipes

Pierced Coconut

Tropical Drinks

With summer almost upon us, I thought it would be a great idea to share these refreshing summer drinks. I hope the videos at the end put you in the mood for celebrating the summer season.

Daiquiri Made With Coconut

Ingredients:

6-8 coconuts

2 cups light rum

2 cans (6 oz. each) frozen lemonade

2 1/4 cups water

Preparation:

At the top of each coconut are three soft spots. Pierce one with an ice pick or similar instrument and drain liquid. Repeat with each coconut. Now freeze or chill coconuts for at least three hours.

Stir together the rum, lemonade concentrate and water. Chill for approximately one hour.

Remove coconuts from the fridge and place each coconut upright in custard cups. With a funnel, pour 3/4 cup of the rum mixture into each coconut. Insert straw in each and enjoy. (6-8 servings)

Pineapple

Pineapple Outrigger

Ingredients:

2 fresh pineapples

1 pint strawberries

1/2 cup light corn syrup

2 tablespoons water

2 tablespoons orange flavored liqueur or 1 tablespoon thawed orange juice concentrate

Preparation:

When selecting pineapples, select ones with fresh green leaves.  Cut each pineapple in half lengthwise through the green top, then cut each half in half again.  Cut core from each pineapple quarter and cut along curved edges with a grapefruit knife.  Cut fruit crosswise into 3/4 inch slices.  Pull slices by alternating the pulls from each side.  Fill the spaces with strawberries.

Now, stir together corn syrup, water and liqueur.  Just before serving, drizzle over pineapple boats.

HINT:  These can be prepared and refrigerated two hours before serving. 

Tomato Sauce

Simple Beverages

Sparkling Tomato Juice

Ingredients:

2 bottles (7 oz. each) carbonated lemon-lime beverage

1 can (8 oz.) tomato sauce

Preparation:

Simply mix 2 bottles (7 oz. each) carbonated lemon-lime beverage and 1 can (8 oz.) tomato sauce. Serve over ice.

4-5 servings about 1/2 cup each

Cranberry Rose

Ingredients:

2 cups rose, chilled

1 cup cranberry cocktail, chilled

2 cups carbonated water, chilled

Preparation:

Just before serving, stir together wine, cranberry cocktail and carbonated water, pour over ice. If desired, garnish with lemon or orange slices.

6 servings, about 3/4 cup each
